Cozy Toasty Winter Broth
Warm up with this bonito infused broth. Add mushrooms, tofu, chicken or beef, a poached egg. It really goes with anything.
1 garlic bulb
1 large onion
6 tablespoons of miso paste
2 teaspoons of tahini
1.5 tablespoons of Bonito flakes
2 tablespoons of soy sauce (low sodium if you hate things that taste delicious)
2 tablespoons of Mirin
2 liters of bone broth
Roughly chop the onion and peel garlic cloves.
Cook the onion and garlic with a splash of olive oil over low- medium heat. Cook until sticky and brown, about 20 minutes.
Add in bone broth and bring to a boil.
Mash the garlic and onion while it cooks in the broth. Don’t strain or remove onion or garlic once it’s mashed- keep it in for flavor and texture.
Mix in the miso past, tahini, soy sauce, bonito flakes, mirin until well combined in broth. Season with salt and pepper to taste.
Enjoy as is or add ramen noodles, veggies, tofu, chicken.
